Intense aroma, deep green hue, and a wealth of chlorophyll and antioxidants. Our very first oil of the season is bottled in limited quantities, pressed within 4 hours, and selected from the earliest days of picking. It is extra virgin olive oil of the highest order – for those who love character and freshness.

Why is the “first” olive oil special?

We select olives exclusively from the first 4 days of harvest (in end October 2025). The yield is lower than our classic blend – only around 6.5-7% oil per kilo of fruit versus the usual 10-14% – but the aroma and intensity are markedly higher. This is the essence of freshly harvested Tuscan olive oil.

Harvest & micro-production

• Picked and pressed quickly: Olives are milled in micro-batches within 4 hours of picking.
• Limited run: Approximately 1,000-1,500 bottles in total. The exact number is confirmed after bottling – and every bottle is hand-numbered.

Taste & aroma

Expect a fresh, green profile with notes of grass and artichoke, a lively bitterness, and a pleasant peppery tickle in the throat – a classic sign of high polyphenol/antioxidant intensity. If you enjoy bold, peppery oils, this one doubles down on intensity.

Analysis & tasting

Once bottled, the oil is submitted for technical analysis and evaluation by an authorized tasting panel. We will update this page as soon as results are in.

How to use it

The first oil shines as a finishing touch:

• Over soups (e.g. tomato or bean) with good bread
• On fresh vegetables, beans, and salads
• On bruschetta and crostini
• Over grilled fish, burrata, steak, or roasted root vegetables
